Goat Academy

March 17-19, 2021

 Join a small group of eager learners for three days of intense, focused, and fun holistic goat care education. From fecal testing to midwifery and yogurt making to hoof trimming, we’ll cover a lot. I schedule a few goats to be due to kid during this time as well as having kids ready for disbudding (with sedation) and much more. You’ll also have the opportunity for questions and interaction with other eager goat enthusiasts!

Basics and Beyond – Cheese and Dairy Products

May 7,8, 2021

Two day immersion into the wonderful world of homemade dairy products! Join a small group of home and hobby enthusiasts at Pholia Farm for three days of hands-on and mouth-on cheese and dairy fermentation and focused tasting sessions.

We’ll make things such as cultured and sweet cream butter, yogurt, kefir, paneer, ricotta, fromage blanc, chevre, mozzarella, burrata, feta (fresh and marinated), and squeaky cheddar curds. We’ll use them in cooking and enjoy them for meals. There will also be several pairing classes including pairing cheeses with wines, ciders, and beers.

We’ll also do a tasting at a cheese shop, visit a local winery that also is a creamery, and have guided tour through how beer fermentation is amazingly similar to that of making cheese and why they pair together so well.

Farmstead Cheesemaker Short Course 2021

April 15-17, 2021

Three days of deep dive into making cheese utilizing science and art in Pholia’s small, farmstread creamery. We’ll make multiple cheese varieties using cow and goat milk (sometimes sheep also), and do a lot of cheese tasting of the same varieties. This small class is limited to 6 or fewer students for optimum hands on experience. (Masks may be required depending on the darned coronavirus)

The Cottage Camper

Refurbished 19 foot travel trailer with queen bed and sitting area. Use of the main bathroom and grill on front patio. Electricity, but no other amenities. Basic, clean and comfy. Book privately. Available only during classes.

Just want to find a course that will be certain to advance me in cheesemaking. Im sure yours would. I live in Jackson Tennessee. My name is Jim Haley.     Yes, we usually have a March short course also. I don’t have the dates up yet. Medford, Or is where you would fly in. There are more details about lodging on the farm’s website, but we have 3 options for different prices on farm, and then the nearest hotel is in Rogue River, 10 miles away: Inn at the Rogue Best Western.
